L'Oree Du Château 

Deliberately avoiding anything to do with booking.com (very bad experiences - but this hotel does appear there too), we stumbled on this independent, family run hotel. It is very conveniently positioned near the motorway half-way to Provence/Var/Nice. Situated in a large, secluded, mature garden. In fact, just how you would picture a large, bourgeois family villa at the turn of the 20th century - which is exactly what the building was. Interior reflects this: rooms are large, comfortable, well equipped. Some might (pedantically) call the décor old-fashioned - but it is in impeccable order and charming, calming, welcoming. The food is several classes above what you might find by pure chance, without a recommendation and/or reservation - even in nearby Lyon, the gastronomy capital of Europe. There is not enough space here to even start talking about breakfast - I would say that the food is worth the trip on it's own! Add to this very personalised welcome and service; incredibly helpful, friendly, patient and interested... Like us, you will never again go near a hotel of any other sort if you can help it!
